I haven't written in a VERY long time! Life has happened. More children have been born. They have grown. Animals have been added to the household. I am still reading lots and lots of books and using Pinterest to gain loads of ideas!
Our current challenge is to "get healthy". There is weight to be lost, muscle to gain, and life to live! One of the current popular emphasis in the world of healthy is to eat more protein. We are meat eaters, but some of us are dairy free. The easiest, least expensive way to add protein to your meal is non fat Greek yogurt or low fat cottage cheese. The meals look so delicious but I can't risk certain members of our house accidentally eating something they shouldn't! So I am on a mission to add protein to our favorite dairy free cheese recipes! Stay tuned as I flesh that out!
For fun today's lunch was a mac and cheese taste test for those of us that can have dairy and I tried a recipe from Pinterest to make "cheese" powder for those who can't have dairy. I made no substitutions, so there was only like 7g of protein in the big bowl the 17yo ate.
